What’s on my plate for breakfast?

Welcome!

I’m back for another month – joining in with Donna and Deb for their What’s on your plate challenge series. These posts go live on the first Wednesday of each month (for Donna and Deb in Canada) and Thursday for those of us us in Australia.

As I’ve said numerous times, I’m not known as a cook, or a baker, or a foodie – so to join these other bloggers sharing what’s on my plate is kind of a big deal for me. But, as it’s my year of being Bold, I’m open to saying yes more often these days.

And I do like taking photos of things, including food, so I’m always happy to join in.

Breakfast is my favourite meal of the day

I am currently trying to get back on track with food and regular exercise. It’s been too easy while in lockdown to cook delicious sweet things, eat them and then wonder why even my old leggings are feeling a tad tight!

I walk most days and ride my bike when the weather permits, but I have needed to add some strength training into my days so have joined an online class with a few friends. It’s given me a much needed impetus to relook at what I’m putting into my mouth – but not only that, why am I eating what I’m eating? I would say a lot of it has been due to boredom and uncertainty in my world!

So I am going back over things that have worked for me in the past and trying to do better for my one and only body.

I love breakfasts and often whip up a yummy savoury omelette or poached eggs and smoked salmon, but sometimes on a weekend I go for pancakes. These are a low sugar variety and I load them up with (no sugar) maple syrup, home cooked rhubarb (or other fruit) and a healthy yoghurt on the side.

I find a serve of these pancakes can take me right through the morning into the afternoon, without me looking for other snacky treats along the way! That’s got to be a win/win right?

  1. They look so good and I love that blue and white plate.. I love rhubarb, it always reminds me of growing up. Neither Grant nor Sarah like it so it’s not something I have very much these days.

  2. I absolutely love pancakes. Love love love. My favorite are harvest grain pancakes that are seedy and textured and delicious. Have always wanted to try my hand at making crepes and even put that on a bucket list one season but never got brave enough to try. Your rhubarb looks tangy and yummy, too. Bon appetit.

    1. Thanks Sue, and I can’t believe you’ve not made pancakes before. For some reason i just can’t get into smoothies. I also love going out for brunch with friends.

  3. Deb that breakfast looks amazing. I’ve never thought to have rhubarb with eggs but it looks amazing. We have a huge amount of rhubarb in the vegie garden so I will be cooking some up to serve with poached eggs. I’ve been on the hunt for rhubarb ideas, so thanks for the great idea.

  4. That looks so tasty and colourful on your pretty plate. I find that snacking is my enemy and if I don’t have an early lunch I have to struggle to keep myself away from the biscuit tin!

  5. Breakfast is my absolute favourite meal (especially when I have the chance to eat a good quality breakfast out). Your pancakes and your plates look gorgeous together and have my mouth-watering!

  6. Breakfast is also my favourite meal of the day …. and breakfast foods for lunch & dinner is just fine by me!

    Your rhubard looks divine. I haven’t had any for ages: last time was in Dallas TX almost 30 years ago. I had rhubarb pie for the first (and unfortunately last) time. Heaven!

      1. I know, right? It’s just not a vegetable we see often in our grocery store chiller section. And on the odd occasion that some appear, they are expensive enough to discourage experimentation!

    1. Yes the yoghurt makes a difference to me BernieLynne and gives me some much needed dairy. I’ve not heard of Saskatoon or chokecherry syrup before but they sound very interesting!
